Broiled Chicken Breast Rolls
- 1 whole chicken breast, skinned, halved lengthwise & boned
- 1/2 package cream cheese, softened
- 3/4 teaspoon prepared mustard
- 1 Tablespoon butter, melted
- 1/4 cup crushed cracker crumbs
- garlic to taste
- 1/4 teaspoon "Cavender's Greek Seasoning"
1. Place breasts, bone side up on cutting board
2. Pound out from center with meat mallet
3. Season both sides of chicken breast with salt & pepper
4. Combine: softened cream cheese, mustard and "Cavender's Greek Seasoning"
5. Spread about 1 tablespoon of cream cheese mixture on 1 side of each chicken breast
6. Fold in sides and roll up Jelly-roll style
7. Brush with some butter, roll in crumbs, Broil 10 min, turn and brush with some butter, broil 10 min. more or until well done.
