Stuffed Yellow Squash
- 4-6 medium yellow squash (crooked neck)
- 2 tablespoons olive oil
- 1 yellow onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp. "Cavender's Greek Seasoning"
- 1/2 cup Bacon Bits
- 3 eggs
- 1 cup cracker crumbs
- 1 cup shredded cheddar cheese
- 1/4 cup Parmesan cheese
Boil squash in lightly salted water for 10-15 min. Cut jinto lengthwise pieces, place on greased baking dish. Scoop out squash and mix this with Bacon Bits, eggs, and cracker crumbs and shredded cheese. Put this mixture back into the squash halves and top with Parmesan cheese. Bake for 10-15 min. until slightly browned.
